Vegan Christmas Croquettes

 

Behind this recipe is my lovely mom who is following a plant based diet for about 7-8 years. I might one day share her unbelievable story about her breast cysts that disseapred within 30 days after dropping animal products. Let’s leave it for the next time here is a highly requested recipe.  You will love this one 🙂

Lets go!

Ingredients:

– 2 cups all-purpose wheat flour

– 1 cup oat flour

– 2 cups plant-based milk

– 1/4 teaspoon salt

– 2 tablespoons ground flaxseed

Instructions:

1. In a mixing bowl, combine the all-purpose wheat flour, oat flour, plant-based milk, salt, and ground flaxseed.

2. Mix well until you have a smooth batter.

3. Heat a non-stick skillet or griddle over medium heat.

4. With oil or not  cook until the edges start to lift and the bottom is golden brown, then flip and cook the other side.

5. Repeat until all the batter is used, creating a stack of delicious croquettes.

Vegetable Filling:

 

Ingredients:

– 4 medium carrots, grated

– 2 parsley roots, grated

– 1 medium celery root, grated

– 1 onion, grated

– 1 zucchini, grated

 

Spice Mixture:

– 1 heaping teaspoon salt

– 1 teaspoon sweet paprika

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon black pepper

– A pinch of cayenne pepper

– 1/2 teaspoon nutmeg

 

Instructions:

1. In a large pan, combine the grated carrots, parsley roots, celery root, onion, and zucchini.

2. Add the spice mixture (salt, sweet paprika, smoked paprika, black pepper, cayenne pepper, nutmeg) to the vegetables.

3. Sauté the vegetables until they are softened and cooked through.

 

Assembly:

1. Place a spoonful of the vegetable filling onto each oat flour pancake.

2. Roll the pancakes into cylinders, enclosing the vegetable filling.

3. These can be stored in the refrigerator for a few days or frozen for later use.

 

Optional Cooking Step:

1. Before serving, you can dip the rolled pancakes in milk or water.

2. Coat them with breadcrumbs seasoned with a pinch of salt and pepper.

3. Pan-fry until golden brown.
